Abstract

Latar Belakang: Praktik kearifan lokal hidangan Ute Saung Ndusuk mempercayai
pengolahan daging bersama daun Ndusuk yang dikenal sebagai tanaman penurun
lemak daging, namun landasan ilmiahnya belum dieksplorasi. Tujuan: Penelitian
ini bertujuan memprofilkan perubahan komponen metabolit sekunder akibat
perebusan antara daun Ndusuk (Melastoma malabathricum L.) dan matriks hewani.
Metode: Ekstrak diperoleh melalui metode perebusan berbasis air untuk kelompok
kontrol (daun tunggal) dan sampel (daun bersama daging iga sapi). Profil metabolit
dianalisis menggunakan instrumen Gas Chromatography-Mass Spectrometry (GCMS). Hasil: Perebusan memicu perubahan senyawa dari 125 senyawa pada kontrol
menjadi 184 senyawa pada sampel. Terjadi pergeseran dominasi komponen dari
golongan furan menuju fraksi asam lemak. Proses pengolahan bersama ini
menghasilkan senyawa eksklusif baru berupa penanda lipid hewani serta
antioksidan fenolik (pyrogallol dan benzofuran) hasil hidrolisis tanin daun.
Simpulan: Perebusan bersama memicu pembentukan kompleks fenolik-lipid
interfasial yang bertindak sebagai perisai antioksidan alami untuk memelihara
stabilitas fisikokimia dan menghambat oksidasi lemak daging. Saran: Penelitian
selanjutnya perlu melakukan uji bioaktivitas lanjutan secara in vivo untuk
mengevaluasi efikasi kardioprotektif dari sediaan ekstrak terproses ini.
